Groove soju is a traditional liquor in Shaoxing. It is made from rice wine lees as raw material, through fermentation, distillation and other processes. The name tank soju comes from the special tank distillation equipment used in the process of making it.

Tank shochu has a rich aroma and a unique taste, and generally contains about 40% alcohol content. It is characterized by its full-bodied, soft taste and long finish, and is often used to celebrate holidays, entertain guests, or give as gifts.
